Set aside.<\/p>\n<ul>\n<li>1\/4 cup sugar<\/li>\n<li>3 TB flour<\/li>\n<li>1 TB cold butter cut into 2 pieces<\/li>\n<li>1\/2 tsp cinnamon<\/li>\n<li>pinch of salt<\/li>\n<li>Spray muffin tins with Bakers Secret or Pam<\/li>\n<\/ul>\n<p>Process together:<\/p>\n<ul>\n<li>1 cup flour<\/li>\n<li>1\/2 cup whole wheat flour<\/li>\n<li>1\/2 cup sugar<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1\/2 tsp baking soda<\/li>\n<li>1\/4 tsp salt<\/li>\n<\/ul>\n<p>Add:<\/p>\n<ul>\n<li>1 stick unsalted butter, melted and cooled<\/li>\n<li>2 large eggs<\/li>\n<li>1 tsp vanilla<\/li>\n<li>2\/3 cup buttermilk<\/li>\n<\/ul>\n<p><strong><em>Recipe:<\/em><\/strong><\/p>\n<ol>\n<li>Pulse until just combined.<\/li>\n<li>Scrape down sides of bowl. Pulse again. Transfer mixture to a large bowl.<\/li>\n<li>Add: 1 1\/2 cups frozen blueberries. Fold in carefully.<\/li>\n<li>Fill muffin cups (I use an ice cream scoop) and sprinkle each with two teaspoons of the streusel.<\/li>\n<li>Bake for 25 to 28 minutes until toothpick comes out clean.<\/li>\n<li>Let cool in tins 5 minutes, turn out and immediately turn right side up before they collapse. Makes 12 regular or 6 giant muffins<\/li>\n<\/ol>\n<p><em><strong>Note<\/strong><\/em>:<\/p>\n<p>I quadruple the streusel recipe and keep it in the freezer.
