{"id":138,"date":"2013-03-02T14:13:27","date_gmt":"2013-03-02T14:13:27","guid":{"rendered":"http:\/\/www.tildenave.com\/?page_id=138"},"modified":"2023-05-04T14:57:23","modified_gmt":"2023-05-04T14:57:23","slug":"ritas-turkey-stuffing","status":"publish","type":"page","link":"https:\/\/www.tildenave.com\/?page_id=138","title":{"rendered":"Rita&#8217;s Turkey Stuffing"},"content":{"rendered":"<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>1 lb. bulk sausage, removed from casings and broken up into chunks<\/li>\n<li>1 lbs onions cut into large dice<\/li>\n<li>4 celery stalks with leaves, sliced thinly<\/li>\n<li>6 cups torn crustless bread<\/li>\n<li>1\/4 stick melted butter<\/li>\n<li>3 cups Pepperidge Farm stuffing<\/li>\n<li>2 TB Bells Seasoning( buy a new box each November)<\/li>\n<li>2 tsp kosher salt<\/li>\n<li>2 tsp fresh pepper<\/li>\n<li>2 eggs, beaten<\/li>\n<li>2 cups chicken stock (more or less)<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Cook sausage meat slowly until no longer pink, but still soft, not brown. Remove sausage meat to a plate.<\/li>\n<li>Drain off\u00a0 all fat.Wipe pan clean.<\/li>\n<li>Melt butter in pan, then cook onions until soft. Add celery and cook for 5 minutes. Combine with sausage.<\/li>\n<li>\u00a0In large bowl combine bread cubes, stuffing mix, sausage-onion-celery, mixing gently.<\/li>\n<li>Add beaten eggs and mix to combine thoroughly.<\/li>\n<li>Add salt, pepper, bells seasoning and mix well.<\/li>\n<li>Add about 1\/3 cup chicken stock to slightly moisten the stuffing. Not too much, because the turkey will add its own moisture while it cooks.<\/li>\n<li>Stuff cavities of the turkey loosely with the stuffing.Cook stuffed turkey according to weight.<\/li>\n<li>Put excess stuffing into ovenproof casserole and add 1 cup or more\u00a0 chicken stock to moisten stuffing. Cover and bake for 45 at 350\u00ba.
