{"id":158,"date":"2013-03-02T14:40:13","date_gmt":"2013-03-02T14:40:13","guid":{"rendered":"http:\/\/www.tildenave.com\/?page_id=158"},"modified":"2023-05-04T14:56:51","modified_gmt":"2023-05-04T14:56:51","slug":"cornish-game-hens-with-fruit","status":"publish","type":"page","link":"https:\/\/www.tildenave.com\/?page_id=158","title":{"rendered":"Cornish Game Hens with fruit"},"content":{"rendered":"<p><strong><em>Creator:\u00a0<\/em><\/strong><\/p>\n<p>Pierre Franey<\/p>\n<p><strong><em>In Avance:<\/em><\/strong><\/p>\n<p>For two people or four<\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>2 game hens ( 1 1\/2 lbs or so With cranberries<\/li>\n<li>1 TB olive oil<\/li>\n<li>S&amp;P<\/li>\n<li>1 small onion peeled and cut in half<\/li>\n<li>1\/4 cup dry sherry 1\/4 cup dry white wine<\/li>\n<li>1 TB red wine vinegar<\/li>\n<li>1 TB honey 1TB honey<\/li>\n<li>1\/2 cup chicken broth 1\/2 cup chicken broth<\/li>\n<li>1 TB tomato paste 1 TB Tomato paste<\/li>\n<li>21cups bing cherries, pitted 1 cup cranberries<\/li>\n<li>1 TB butter<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Remove backbones and flatten<\/li>\n<li>Olive oil in baking pan<\/li>\n<li>Roll hens in olive oil<\/li>\n<li>S&amp;P<\/li>\n<li>Roast breast side up with giblets and One Onion cut in half<\/li>\n<li>40 minutes at 450 .Remove to platter. Cover with foil<\/li>\n<li>Skim fat<\/li>\n<\/ol>\n<p><strong><em>Notes:\u00a0<\/em><\/strong><\/p>\n<p>Place pan on stove and bring to boil. Add sherry and vinegar and stir to dissolve particles baked onto pan. Strain into saucepan and bring to a boil. Reduce by half. Add honey, broth and tomato paste. Stir in any additional juices from the birds. Add cherries and bring to a boil. Cook\u00a0 about 3 minutes, stirring often. Add butter.
