Especially if you don&#8217;t like rhubarb.<\/p>\n<p>Preheat oven to 375\u00ba<\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<p>Pastry for a\u00a0 9 inch pie<\/p>\n<ul>\n<li>3 eggs, separated<\/li>\n<li>1 1\/4 cup sugar<\/li>\n<li>1\/4 cup soft unsalted butter<\/li>\n<li>3 TB frozen orange juice concentrate, thawed<\/li>\n<li>1\/4 cup flour<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>2 1\/2 cups rhubarb cut into 1\/2 inch pieces<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Line pie plate with pastry making a high, fluted rim<\/li>\n<li>Beat egg whites until stiff. Add 1\/4 cup sugar slowly, beating well until glossy.Set aside<\/li>\n<li>Combine egg yolks, butter and, juice, beat thoroughly<\/li>\n<li>Add remaining sugar, flour and salt to yolk mixture, combining well.<\/li>\n<li>Stir in rhubarb<\/li>\n<li>Gently fold in egg white mixture.
