{"id":248,"date":"2013-03-02T19:51:31","date_gmt":"2013-03-02T19:51:31","guid":{"rendered":"http:\/\/www.tildenave.com\/?page_id=248"},"modified":"2023-05-04T15:03:24","modified_gmt":"2023-05-04T15:03:24","slug":"vegetable-fettucine","status":"publish","type":"page","link":"https:\/\/www.tildenave.com\/?page_id=248","title":{"rendered":"Vegetable Fettucine"},"content":{"rendered":"<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<p>For each serving:<\/p>\n<ul>\n<li>2 to 3 italian plum tomatoes cut into bite sized pieces<\/li>\n<li>3 to 4 fresh mushrooms, sliced<\/li>\n<li>3 artichoke hearts, canned or frozen, cut bite sized<\/li>\n<li>6 fresh basil leaves thinly sliced<\/li>\n<li>1\/4 tsp each of thyme and oregano<\/li>\n<li>1 clove garlic finely chopped<\/li>\n<li>1 TB olive oil<\/li>\n<li>1\/4 cup tomato sauce<\/li>\n<li>1\/4 cup parmesean cheese, grated<\/li>\n<li>2 tsp toasted pine nuts<\/li>\n<li>1\/4 lb dry fettucine or 2 oz fresh<\/li>\n<li>S &amp; P to taste<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Start pot of water for pasta<\/li>\n<li>Cook tomato and herbs\u00a0 and S&amp;P over moderate heat for 20 minutes.<\/li>\n<li>In a skillet heat olive oil and garlic, then add mushrooms and artichokes. Cook until artichokes are warm. Add to tomato and herbs. Add parsley<\/li>\n<li>Drop fettucini into boiling salted water and cook until al dente. Drain well and return to the pot. Add enough canned tomato sauce to moisten. Add 1\/2 of the parmesean. Toss to mix well<\/li>\n<li>Put fettucine onto plate. Top with the vegetable mixture.
