{"id":275,"date":"2013-03-02T20:25:36","date_gmt":"2013-03-02T20:25:36","guid":{"rendered":"http:\/\/www.tildenave.com\/?page_id=275"},"modified":"2023-05-04T15:04:11","modified_gmt":"2023-05-04T15:04:11","slug":"shrimp-margarita","status":"publish","type":"page","link":"https:\/\/www.tildenave.com\/?page_id=275","title":{"rendered":"Shrimp Margarita"},"content":{"rendered":"<p><strong><em>Creator:\u00a0<\/em><\/strong><\/p>\n<p>Pierre Franey<\/p>\n<p><strong><em>B&#8217;s Notes:<\/em><\/strong><\/p>\n<p>The best shrimp dish ever.<\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<p>4 servings<\/p>\n<ul>\n<li>1 lb ( about 20 ) medium shrimp<\/li>\n<li>1\/4 fresh lime juice<\/li>\n<li>S&amp;P<\/li>\n<li>1 small ripe avocado<\/li>\n<li>2 TB butter<\/li>\n<li>1TB shallots, finely chopped<\/li>\n<li>1\/4 cup tequila<\/li>\n<li>3\/4 cups half and half or heavy cream<\/li>\n<li>1 TB cilantro or italian parsley, finely chopped<\/li>\n<li>Rice<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Shell and devein shrimp. Butterfly shrimp by splitting them partly down the back, s tarting at the head and stopping short of the tail. Flatten them lightly.<\/li>\n<li>Place shrimp in bowl with lime juice, salt and pepper. Let stand briefly until ready to cook.<\/li>\n<li>Peel avocado and cut into half inch slices. Discard pit. Use as soon as possible or flesh will discolor.<\/li>\n<li>Heat butter in skillet: when it is hot but not smoking add shrimp, stirring rapidly. Cook about two minutes, sprinkle with shallots and cook, stirring, about 10 seconds.<\/li>\n<li>Carefully add tequila, which may flare up. Add cream and cook over high heat about one minute.<\/li>\n<li>Add S&amp;P and avocado and cook just until the avocado slices are piping hot.<\/li>\n<li>Using a slotted spoon, transfer the shrimp and avocado pieces to a hot serving dish<\/li>\n<li>Bring the sauce to a rolling boil for about 2 minutes. Add cilantro or parsley and\u00a0 pour over shrimp and avocado.
