(You can use larger ones, but use outer slices only, discard\u00a0 inner\u00a0 core with all the seeds.)<\/li>\n<li>salt<\/li>\n<li>3 large eggs<\/li>\n<li>1 cup flour<\/li>\n<li>Vegetable oil for frying<\/li>\n<li>4 oz parmesan cheese, grated<\/li>\n<li>5 oz mozzarella cheese<\/li>\n<li>3 cups tomato sauce- recipe follows<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Sprinkle zucchini slices with salt and drain them in a colander for 20 minutes. Pat dry with paper towels.<\/li>\n<li>Beat eggs with a pinch of salt. Dip the zucchini in flour, then in the egg mixture.\u00a0 Cook in very hot oil for about 1 1\/2 minutes per side. Drain on paper towels.<\/li>\n<li>Shred two thirds of the mozzarella, slice the remaining cheese into 7 equal slices.<\/li>\n<li>Preheat oven to 425.<\/li>\n<li>Layer one third of the fried zucchini , one third tomato sauce, 1\/3 parmesean\u00a0 and shredded mozzarella. Repeat, making two more layers. Top with sliced mozzarella.<\/li>\n<li>Bake in preheated oven for 15 minutes. Let cool for 20 minutes before serving.<\/li>\n<\/ol>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<p>Tomato Sauce<\/p>\n<ul>\n<li>2 fresh basil leaves, chopped<\/li>\n<li>1\/4 cup parsley, chopped<\/li>\n<li>1 small onion, chopped<\/li>\n<li>1 TB olive oil<\/li>\n<li>3 medium ripe tomatoes ( about 18 oz total)coarsely chopped<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1\/4 fresh ground pepper1\/2 tsp sugar<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Cook chopped vegetables and herbs in olive oil for 2 minutes .Add tomatoes and\u00a0 simmer for 20 minutes, partially covered, stirring occasionally.<\/li>\n<li>Process\u00a0 for 30 seconds and strain. Add salt, pepper and sugar. Cook uncovered for 10 minutes until thick.<\/li>\n<\/ol>\n<p><strong><em>Notes:<\/em><\/strong><\/p>\n<p>I use whatever sauce I have in the freezer, adding basil and parsley.
