I always called it Rita&#8217;s casserole- NEVER eggplant casserole- and you all liked it. Rita never admitted that it was eggplant either until I asked her for the recipe after I was married!<\/p>\n<p><strong><em>In Advance:\u00a0<\/em><\/strong><\/p>\n<p>Preheat oven to 350\u00ba<\/p>\n<p><strong><em>Ingredients:<\/em><\/strong><\/p>\n<ul>\n<li>1 large glossy eggplant, peeled and diced<\/li>\n<li>1 large onion, diced<\/li>\n<li>2 green peppers, diced<\/li>\n<li>3 cloves garlic, chopped<\/li>\n<li>3 stalks celery, sliced 1\/2 inch thick<\/li>\n<li>3\/4 cup olive oil<\/li>\n<li>1 small can tomato paste<\/li>\n<li>1 15 oz. can tomatoes<\/li>\n<li>Pepperidge farm stuffing ( about 2 cups)<\/li>\n<li>1 tsp oregano<\/li>\n<li>1 tsp sugar<\/li>\n<li>S &amp; P<\/li>\n<li>Parmesean cheese<\/li>\n<\/ul>\n<p><em><strong>Recipe:<\/strong><\/em><\/p>\n<ol>\n<li>Saute veggies in olive oil until soft. Place in large bowl<\/li>\n<li>Add tomato paste, tomatoes, herbs, sugar and S&amp;P<\/li>\n<li>Mix in enough stuffing mix to make the mixture firmer than soup.<\/li>\n<li>Place in casserole, sprinkle with parmesean cheese<\/li>\n<li>Bake for one hour<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Creator:\u00a0 RitaMurray B&#8217;s Notes: I used to add 1 lb. browned hamburger to this.
