Do not scrape or peel them. Place in a large bowl of cold water to soak for 15 minutes.<\/li>\n<li>Heat a large quantity of water, salt added, in a flameproof casserole. When boiling, put the whole carrots in and boil until tender.<\/li>\n<li>Drain and place in a large bowl of cold water. When cool, slip off the skins. Cut into 1\/8 inch slices<\/li>\n<li>Heat butter, add carrots and saute 5 minutes.
